how can I fully remove a replica node from UCP??

You can use the UCP bootstrapper in the CLI to do this. When running on your node, you can use the uninstall command:

docker run --rm -it --name ucp -v /var/run/docker.sock:/var/run/docker.sock dockerorca/ucp uninstall

(–help can provide you with a list of optional parameters as well)

One caveat: If you are currently running HA with 1 master and 2 replicas, and you delete 1 of the replicas, make sure you add a new replica as soon as possible. HA requires 1 master and 2 replicas, and may cause issues on your deployment without that minimum amount.
