Organizr Start Over

I am brand new to Docker and the concept of containers. I have been using Virtual Machines for a while, but Containers seems to be a more convenient way to do what I want to do.
The first question I have is how to remove a container completely so I can start over. I am currently using docker-compose to simplify my attempts. So far everything is running just fine, but I would like to find a way to completely remove a container so I can start over with a new setup.
As an example. I installed Organizr. Everything went well, but then I found it won’t let me log in because it says my account or password is invalid. I delete the image, and the container but when I run docker-compose and open the Organizr web site I am back at the login screen. I should be back at the setup screen.
Any suggestions on what I am doing wrong?
Ubuntu Server LTS 18.04.2
Latest versions of Organizr and Docker.
