Can I install docker on C drive with the container and have all the package files stored on D or E drive?

I am in the process of setting up a nextcloud server and my C drive is a small SSD that I am using just for the operating system and applications to increase speed.

However I am using several other drives in RAID for storage.

Is there a way to install docker on my C drive and have all my files that will be syncing stored on my other drive(s)?
