Containers and Images disappear overnight until Docker is restarted

First ill start by saying I’m fairly new to Docker. I have Docker desktop running on a Windows 2019 Server machine. All the images start and run fine. Unfortunately every night something happens, and all of the images/containers disappear. Docker shows the engine is still running. I have to restart the Docker engine every morning to get the images/containers to reappear. I’m not sure how to access any logs to see what is going on.

Does anyone have an ideas?

Did you find a solution because I have the same problem in situations where Windows Server is 2019 or earlier versions. It is working without this problem only in situations starting with Windows Server 2022 with WSL
