Thanks @kekcheeyoung413 in fact, after so many hours of thinking, I started the Docker desktop Service manually (it runs under my user which has admin privileges), then I did the “switch to win containers” and hop it worked fine and DD switched to win containers.
So it seems that when I click “Start service” in DD GUI was not able to start the service in spite of the fact the service runs with my account which has admin privileges as I said on the box.
