To answer why you cannot read about this flags in the documentation I found this on the forum:

What happened to :delegated, :cached, :ro and other flags?

To anyone winding up here with the same question: it seems that the new gRPC-FUSE backend made these flags redundant. In other words, if gRPC-FUSE is currently enabled (in the experimental features section of the Docker settings at the time of writing), you don’t need those flags anymore. See this GitHub issue.
