I’ve configured Hyper-V, Containers, verified SLAT, but keep getting the same error message during (failed) install.
I am not very computer savvy, and appreciate any help.

Have you changed any configuration file after installing Docker? Or could it be that the installation was interrupted and some files are broken? That error message looks like trying to parse an invalid json file. Or maybe the problem is that it doesn’t know where the settings json is as the Path seems to be empty in the error message.
The settings store is somewhere in the hidden AppData folder if I’m not mistaken. I don’t run my Windows at the moment. I would try to uninstall Docker Desktop and remove all files as described here:
That page shows the files to delete including the docker client settings and the settings store in the AppData folder. Then you could try reinstalling.
If that doesn’t help, is choosing the WSL2 backend an option for you? Do you want to use only the HyperV backend? I haven’t used that for years since WSL exists, so I have no idea how stable that is currently, although it is entirely possible that you would get the same error message with the WSL2 backend..
